As for the beginning, I often like to start things a little slow. Because it is easier to build up if you start out with a small selection of instruments that aren't going all over the place.
Sometimes in music though, the empty and quieter moments are just as important as the big and thunderous crashing ones. Because if the entire song was flat out in your face, then the big climatic moments would lose their effectiveness.
But I do understand where you are coming from.
